Cooking with Chocolate
One-day cookery course
Our chocolate cookery course is aimed at
giving students a basic understanding of the theoretical and
practical knowledge of chocolate and chocolate processing.
Owing to limited time, we will give hand-outs on theory and
we will spend some time talking about the different types
of chocolate - from raw material to bean varieties and fermentation,
through to powder and butter and the refining and viscosity,
to the method of tempering chocolate. There will be plenty
of practical work, including enrobing, fresh cream truffles,
sauces, and culinary uses such as chocolate pastry, white
chocolate tart, and working with chocolate for decoration.
A great day for anyone, with plenty to take
home, we will also provide you with a light lunch (not chocolate!)
so you can continue working and tasting and enjoying your
chocolate master class.

One-day cookery courses run from 9.30 to 3.30.
