At the Cookery School we have a very simple
approach to cookery. We use the very best organic, local,
seasonal produce and promote food that has been grown in a
way that is sustainable, environmentally sensitive and supportive
of local businesses. All our courses teach skills which are incorporated in daily
recipes which you prepare yourself. The courses begin at 9.30am
daily.
General Information
At the start of each course you will be given knife skills
training, introduction to the equipment and kitchen tour,
as well as food handling and hygiene.
A cookery booklet containing notes and recipes is included
in the one and two day courses. Notes theories and recipes
are included in the one week and four week courses.

One-day cookery courses
9.30am to approx 4.00pm
You will break around 1.30pm with a three course meal featuring dishes you have prepared yourself from the course menu. A glass of wine that has been matched to the menu is served with the meal.
Two-day cookery courses
Saturday: 9.30am to approx. 6.00pm
Sunday: 9.30am to approx. 4.00pm
On Saturday you will have a light lunch followed by an early evening tasting of your sample menu and a glass of matched wine around 5.00pm with your fellow students.
On Sunday you will work through until 2.30pm and your course will finish with the three courses you have prepared, and an opportunity for a course round-up with the Chef Tutor.
Courses lasting five days and over
Monday to Thursday: 9.30am to approx. 6.00pm
Friday: 9.30am to approx. 4.00pm
There will be light lunch each day around 1.30pm.
You will work to an early evening tasting around 5.00pm
of the food that has been prepared during the day.
Wine is served on a Thursday evening as part of the
course to match the menu of the day. |
