The flavours of the Mediterranean are wide and varied, from the fragrant spices of Turkey to the salty anchovies of Italy and are perfect for creating a memorable dinner party menu.

For this exciting one-day Mediterranean cookery course, we have created a menu that explores some of these flavours with a 3 course menu that will conjure memories of delicious meals enjoyed in lands of sun and sea.

For our starter we will be giving classic falafels a modern twist with shredded confit duck leg and earthy beetroot, married to freshly made pitta breads and a fresh, cooling Tzatziki and salads.

You will learn the technique of salt-baking fish, presenting beautiful flakes of sea-bream off the bone with a rich, nutty risotto, vibrant greens and salty fresh anchovies plus the kick of freshly made aioli.

With so many wonderful, diverse Mediterranean flavours in your main course you will close the meal with a luxurious honey-sweet dessert.

Turkey / Greece (Starter)

  • Duck and beetroot falafel

  • Salt baked bream stuffed with fennel, parsley, orange and lemon faro with pancetta pea and mint, sprouting broccoli with hazelnuts and anchovies & spicy aioli

Spain (Dessert)

  • Arroz con leche with chocolate panforte
    Spanish rice pudding with spiced fruit cake
