This fast-paced, one-day course will show you professional cookery tips and techniques that you can apply to all areas of your cookery.

We will cover a lot of ground in one day and you will be filleting fish, preparing seafood and working with meat (or game if in season).

You need to be a confident cook and comfortable working at pace and using knives.

Using the finest ingredients you will learn to create some delicious food, presented to a restaurant standard.

  • Red mullet fillet with fennel and olive salad and anchovy beignet and bisque sauce
  • Herb crusted beef fillet with braised beef & mustard, Hollandaise tartlet, broccoli puree, fondant potato, baby carrots
  • Warm Valhrona chocolate mousse with pistachio ice cream, pistachio tuilles
