French Plus
Weekend cookery course
A two-day version of our popular one-day course, our French
weekend is an opportunity to get a more in-depth look at Gallic
cuisine. From sauces and soups to seafood dishes
like bouillabaisse, regional specialities from Provence
across to Brittany and classic dishes like
Tarte Tatin, this is your chance to delve into a style of
cooking that conquered the world.
Our French weekend cookery course starts at 9.30am on Saturday;
after a short health and safety talk, we begin cooking. The
course is almost entirely hands-on so youll be involved
with preparing dishes throughout the weekend.
We use local, seasonal and organic ingredients wherever possible,
which means that course content can vary slightly depending
on the produce available to us but you could expect to be
cooking dishes like salmon en papillotte, beef bourguignon,
duck confit or tarte au citron.
As with all our cookery courses, the skills you learn will
be used in creating mouthwatering dishes which you will be
able to taste. You will prepare a light lunch on Saturday
followed later in the day around 5pm by a sample menu and
a glass of wine with your fellow students.
On Sunday you will work through till around 2.30pm and your
course will finish with the three course meal you have prepared,
a glass of wine and, most importantly, an opportunity to review
your cookery course with a question and answer session and
informal discussions around the table over lunch.
