Intermediate Cookery Extra

Five-day cookery course - an intensive training course - level 3

This five-day cookery course starts where our Intermediate course ends. We’ll visit many of the same subject areas but in greater depth, building on what you’ve learned on the Intermediate course or on your existing knowledge base. But it also suitable for experienced cooks who already have the skills we teach on the Intermediate course. You will be doing more individual work, as well as working in pairs. The in-depth tuition develops further during the week and enables you to perfect your presentation skills as well as furthering your knowledge of organic produce and how to source ingredients.

If you have the ability to create a two or three course meal for up to 8 people, we could expect that you have the skills necessary to join this course. Although many people come on the Extra course having completed the Beginners, Foundation and Intermediate courses, there are others who come directly on at this level.

As with the Intermediate course, you’ll be working toward an early evening meal and developing a rolling menu that you can apply at home or in the workplace. Daily recipes and essential theory will build up over the week into a course folder covering all aspects of your tuition at the school. It’s a demanding week with over forty hours of hands-on tuition - hard work but immensely satisfying.

New subjects include game, shellfish, poultry, home-curing, soufflés, mousses, purées, consommés, patés and rillettes alongside more advanced techniques in areas such as sauce-making, knife skills, chocolate and sugar, vegetable dishes, pastry and bread.

Much of the course is based on individual work and is suitable for keen amateurs looking to improve or for those cooks who want to discover new ideas and techniques to apply in the workplace.

With over 40 hours hands-on tuition, it is an ideal course for those who are happy to work and enjoy the fast-pace of an intensive course learning many of the secrets of restaurant cookery.
