Deep Fried Fish Cakes - Tod Man Pla
Ingredients:
100g white fish chopped finely
1 clove garlic chopped finely
1 2 tbsp green curry paste (to taste)
2 fresh kaffir lime leaves, stems removed and sliced finely
1/2 tsp ground black pepper
1 egg yolk
1 tbsp oyster sauce
1 tsp fish sauce
1/2 tsp cane sugar
vegetable oil for deep frying
2 tbsp coconut cream
Dipping sauce
Method:
Put the fish in a medium sized bowl with garlic, lime leaves,
curry paste, egg yolk and mix well
Add the coconut cream, oyster sauce, fish sauce, sugar and
pepper. Mix well
Form into little flat cakes
Heat the oil to a medium heat
Drop the flat cakes into the hot oil
Cook, turning until golden brown on both sides
Remove the fish cakes from the oil and drain
Serve with dipping sauce
