Thai Fish Cakes

Ingredients:
100g white fish chopped finely
1 clove garlic chopped finely
3 4 green beans chopped into 1/2cm segments
1 2 tbsp green curry paste (to taste)
2 fresh kaffir lime leaves, stems removed and sliced finely
1/2 tsp ground black pepper
1 egg yolk
1 tbsp oyster sauce
1 tsp fish sauce
1/2 tsp sugar
vegetable oil for deep frying
2 tbsp coconut cream
Method:
1. Put the fish in a medium sized bowl with garlic, green
beans, lime leaves,
curry paste,
egg yolk and mix well
2. Add the coconut cream, oyster sauce, fish sauce, sugar
and pepper. Mix well
3. Form into little flat cakes oil your hands if the
mixture gets too sticky to handle.
4. Heat the oil to a medium heat
5. Drop the fish cakes into the hot oil and cook until golden
brown on both sides
6. Remove the fish cakes from the oil and drain
7. Serve with cucumber dipping sauce or sweet chilli sauce
