I had a stellar time. Callum has plenty to be proud of. It's one thing to coach a student in advanced knife skills in a lesson environment, but imparting the skills well enough for a student to repeat the process at home without instruction is quite another. I learned how to fillet a fish - and I've been able to repeat the process at home with little issue. Thank you to Callum for his time, expertise, insight and patience. I'll certainly be back for more.

A day of Chef Skills was a great day for a Home Cook. A variety of skills, making a good stock, fish filleting, meat trimming, lots of general hints and tips to make cooking more fun. I came away with lots of new ideas and recipes to try at home. The day is so well organised, ingredients weighed out, dishes washed for you so you spend more time with the tutors and cooking in the fully equipped kitchen. Thoroughly recommended and will be booking another course soon. You can see why it is an award winning Cookery School. Excellent.

“I've since tried out all of the recipes at home”
Just a quick note to say how much I enjoyed the Chef Skills one day course with Phil Oram last Wednesday. I was enthused and inspired! It took my interest in cookery to a higher level and I've since tried out all of the recipes at home and also some of the video recipes on your website. I was also really interested to discover those little items that make kitchen life a lot simpler - I've since stocked up on plastic trays and squeezey bottles, a cling film dispenser, steel rings and a really good knife sharpener!!
