On our Indian cookery weekend you will learn the fundamentals of Indian cookery, covering the concepts, history and skills required to understand this hugely varied and vibrant cuisine.

We will teach you how to work with fresh ingredients, herbs and spices to create Indian starters, curries, main dishes and accompaniments that truly reflect the spirit of Indian cuisine and that can easily be replicated in the home without Tandoor ovens or specialist equipment.

You will learn to master the subtleties of flavour, and the power of spice whilst cooking a wide range of delicious, authentic Indian dishes as far removed from the British curry house as Ashburton is from New Delhi.

This is a highly practical course and great fun for couples and friends to take together which also makes for an original gift idea.

The recipes you will prepare are designed to give you as broad a range of fundamental cookery skills as possible, giving you the confidence and skill to further explore this cuisine.

    • Fried Squid with Turmeric and Samphire
    • Keema Samosa
      Spiced lamb parcels with pineapple and ginger chutney.
    • Pork Vindaloo & Jeera Pilaf
      Traditional marinated Goan curry with cumin basmati rice.
    • Chana Aloo
      Chickpea, potato and sev salad with yogurt and tamarind chutney.
    • Naan Bread
      Risen soft Indian bread.

Sunday Menu

    • Murgh Tika Skewers Makhan
      Marinated chicken pieces cooked on a skewer with a sweet tomato masala.
    • Aloo Gobi Mutter Paratha
      Potato, cauliflower and pea stuffed Indian breads.
    • Biryani with Pomegranate, Yogurt and Coriander.
      Haunch of venison cooked slowly with mixed spices, saffron and sultana rice, baked with a roti dough lid served with Cucumber, Tomato and Chilli Salad
